Hungry? Make your own quinoa flatbread!

Easy to make, easy to bake! Delicious and healthy!

1 cup (160 g) uncooked quinoa

2 cups (500 mL) plus 1cup water, if necessary

3 tablespoons (30 g) chia seeds

2 tablespoons (30 mL) virgin coconut oil or olive oil

1 teaspoon fine sea salt

1 teaspoon baking powder

1 egg if you are not vegan

Rinse and drain the quinoa in a fine mesh sieve and transfer to a medium pot. Add 2 cups of water, stir, and bring it to a low boil. Reduce heat to medium, cover with a tight-fitting lid, and cook for 13 to 16 minutes until the water is absorbed and the quinoa is fluffy. The alternative to this is to leave the quinoa in the water overnight, the choice is yours.

In a baking pan place a large sheet of cooking paper and preheat the oven 350F (180C).

Rinse and drain the quinoa seeds and put them into a food processor. Add the other ingredients and start mixing. Add water if necessary. Mix until smooth. Place the mixture on the pan and spread it using a spoon.

Bake for 20 minutes.
