Almond Butter Fudge Recipe

Updated: Feb 21

Let's see if we can make a vegan dessert combo!

Fudge should be smooth and dense with no grittiness or graininess. Since you won’t be using granulated sugar, the chances of getting the wrong texture are greatly reduced. Almond butter provides plant-based protein plus magnesium and vitamin E. If you are not a fan of this nut butter, peanut butter or cashew butter would also be delicious and create the same tempting results.

1 cup coconut oil, at room temp

1 cup almond butter

1/4 cup heavy (whipping) cream (vegan)

10 drops liquid stevia

Pinch sea salt

Line 6- by 6-in. baking dish with parchment paper and set aside. In medium bowl, whisk together coconut oil, almond butter, heavy cream, stevia and salt until very smooth.Spoon mixture into baking dish and smooth top with spatula.Place dish in refrigerator until fudge is firm, about 2 hr.Cut into 36 pieces and store in airtight container in freezer up to 2 weeks.

Simple and sweet! Enjoy!
