Mediterranean Grilled Chicken Salad with Creamy Yogurt Dressing

Here is a tasty recipe you can implement in your Mediterranean Diet Plan.


For the Dressing:

1/4 cup Greek yogurt

Juice of 1 lemon

1/2 tsp dried oregano

1/2 tsp dried mint

1/4 cup extra virgin olive oil

For the Salad:

2 chicken breasts, drizzled with olive oil, salt and pepper

2 cups Spring mix

1 medium tomato, cut in wedges

1 cucumber, sliced

1 avocado,sliced

1/4 red onion, sliced

1/2 cup olives

1/2 cup marinated artichokes

1/2 cup roasted red peppers, sliced into thin strips

1/2 cup crumbled feta cheese


Heat the grill to medium-high heat. Once the grill is hot, grill the chicken breasts directly over the heat. After 5 minutes, flip them once and don't press down on it, you will lose the juices. Depending on how thick your chicken breast is it may take 10 minutes, or up to 15. Slice chicken into desired size for salad. In a small bowl, add yogurt, lemon juice, and dried herbs. Slowly drizzle in the extra virgin olive oil and whisk until fully incorporated. Thin it out with more lemon juice/oil if too thick. To a salad bowl, add spring mix. Arrange all other ingredients in a circle around the lettuce. Sprinkle with crumbled feta. Drizzle lots of dressing on the salad and enjoy!
